Easy Peach Cobbler

The Newlymeds were having people over for a week night dinner and I wasn't going to have a lot of time to prepare.  I basically had 2.5 hours post work to shower and throw together a dinner.  When inviting people to my home (apartment) I feel that there is nothing like a homemade dessert.   (even if it is brownies out of a box!)  My mom gave me this Easy Peach Cobbler recipe that took less than 20 minutes to make and (I think) was a big hit!  It looked pretty fancy, for something so easy

Here is what you will need:
9 x 13 Pyrex
2 large cans sliced peaches in light syrup
1/2 cup brown sugar
1 box of vanilla cake mix
1 stick of unsalted butter
Cinnamon

Procedure:
Drain syrup from peaches into Pyrex

Slice peaches into smaller pieces and place in Pyrex
Sprinkle peaches with cinnamon
Sprinkle peaches with a heaping 1/2 cup of brown sugar
Sprinkle peaches with 1 box of yellow cake mix
Cut 1 stick of butter into small pieces and spread out over the top of your cobbler
Bake at 375 until bubbly for 30 - 45 minutes

Cobbler will be liquid when it comes out of oven
Let cool for 5-10 minutes

Scoop out and serve with Bluebell Vanilla Ice Cream (or any ice cream of your choice)

Let's Get Cookin'

The Newlymeds took a cooking class a few weeks ago.  And when I say we, I mean me.  Doctor J showed up just in time for a picture and to eat.  We both got to shine in our respective areas of "expertise"  mine being cooking (more like a chef in training) and his being eating.

The class had a seafood theme. We made crab fritters, a shrimp and quinoa dish, grilled Swordfish and steamed Sea bass.  I learned that especially when baking, it is important to set out a mise en place.  This is a fancy way of saying a tray with all of your ingredients.  This way you make sure you have everything you need BEFORE you start to cook.  Here are a few of the things I made.

Before we were Newlymeds
This blog has recently celebrated its 1 year anniversary and I have to say...

We've come a long way baby!

I mean this in so many ways.  First of all, technically.  The design has changed, the pictures have (hopefully) improved and I have learned a lot about HTML and what blogging is all about. I have interacted with a lot of great people in the process and feel so thankful.

Secondly, emotionally...  I started this blog during a lonely night when Doctor J was on call.  I was recently married and coming off of the high  of all of the wonderful events that led up to the big day.  I was in a new city, had left my sister and many of my dear friends in NYC and was unemployed.  I had WAY TOO MUCH 
alone time and needed a constructive project.  I felt like I was going through the same thing that so many people with busy significant others go through, whether they are married to a resident, or not!  I wanted to share my story and hopefully, make people feel like they are not alone.  I also wanted to be able to look back on some of these early trying times and laugh. 

So a little more on progress...
I signed Doctor J and I up for a cooking class that was scheduled for last week.  I had planned this months in advance and was hoping J could be there.  All was looking good, until an emergency case came in that day. I was feeling a little disappointed that I would be cooking for 1 instead of 2, but I brought my camera along to capture the experience.  Trying to capture everything for "the blog", was just want I needed to keep my mind off of Doctor J's absence and enjoy myself. This little project that I started, to hopefully reach out to others, was actually helping me!

So here I sit, on one of many nights that Doctor J is on call and although I miss him, I feel content.  So, thank you to this
little blog and all of our readers for letting me share our adventures with you.

Thanks to some help from One Smart Brownie, the Newlymeds are making new healthy choices.   We love Heinz Ketchup in this house, so thankfully they now have an organic option!

We can't wait to ketchup on some much needed sleep (especially Doctor J) and enjoy some sunshine this weekend!

Will You?...

Depending on how old you are and what stage of life you are in, you may have answered this question in a different way.  I recently read an interesting article on how engagements aren't just about popping the question anymore.  They are about HOW you propose. What exotic location or romantic restaurant did you choose?  Did you fly in both of your families to surprise your new fiance after it happened?

Don't worry, this is not the part where I share my mushy gushy engagement story. Although I am a hopeless romantic, I don't believe in over sharing!  Then why am I writing a blog, right?

Depending on how you think about it, prom is just practice for your engagement.  Included are some pictures on how my little brother (He is 18, so I guess not so little anymore) asked his date to prom.   He made french toast with the letters PROM spelled out in chocolate chips and delivered it to his potential prom date before school.  Judging by this, I would say some lucky lady out there is going to get a well thought out proposal!

Medical Action

I was about to do some highlighting of my notes, when I looked down and realized I was looking at a Medical Action pen.  For those of you not familiar with the Medical Action pens (I had to ask too), they are used to mark your skin before surgery.  They are for one time use.  Doctor J must have had them in his pocket when he came home from the hospital and I put them away in our pen holder not realizing what they were.

These pens were probably used to give someone a whole new look!  I went through my handy little pen holder and noticed Doctor J had several of these
lovely pens intermingled with my "normal" pens and highlighters.  Before I chucked them in the garbage for good, I had a little pen photo shoot.

They sure look sexy in blue...

Avocado and Crab Salad

I had some crabmeat in my fridge left over from the Newlymeds Un-Father's Day Celebration and wanted to find a recipe where I could incorporate the crabmeat.  I found this recipe on Gina's Skinny Recipe's that was easy and delicious.

I left out the cilantro and did not add as much olive oil as the recipe called for.  I think it had plenty of flavor without the extra oil.  I used an Oil Mister that I received as a wedding present.  This is a "must have item" for your registry!

I stepped it up a notch on my presentation and VOILA!

Color Me Wednesday: Austin Food Trucks

Walking along South Congress in Austin, I couldn't help but notice the colorful array of food trucks. I was mesmerized by each truck's distinct personality and had to capture them in all of their glory. Due to the extreme Texas heat last weekend, the idea of eating outside was not a favorable one, but I hope to sample some of their fare on my next trip to Austin.

My Favorite Things: A Kiwi Love Story

This past weekend the Newlymeds celebrated the wedding of L, one of K's friends from growing up.  After college L needed a little adventure in her life, so she packed her bags and moved to New Zealand.  Little did she know she would meet the love of her life, M.  The two married in Austin at the Barton Creek Resort.  It was so wonderful to catch up with many of my friends from growing up and celebrate L & M.

It is now time to report on
My Favorite Things from the wedding. As a former wedding planner and a bride I always pay attention to all of the little details. You former and future brides know what I am talking about!

So here are some of My Favorite Things from the wedding weekend:


1) The entrance to the rehearsal dinner at the Salt Lick.

Come on Baby Light my Fire

Once oil lamps, theses now make beautiful vases.  I found them at an estate sale and was blown away by their beauty.  They are my Fabulous Find of the week, just in time for Friday!  I choose red roses to get in the 4th of July spirit!  I hope you all have a wonderful and patriotic weekend!
